I Amaze Myself

So I've been trying to save money and not eat out as much. Not eating out means cooking. I don't cook. I make spaghetti, which you have your choice of with or without hamburger. Jared is the cook. He is amazing at it. I'll bake goodies every now and then, but that's about it. My friend Monique gave me this sign awhile back which is next to my stove...
It describes me precisely. I'm great at kissing (or so I think I am), but not so much at cooking. Let's just say Jared didn't marry me because I won him over with food.
Moving on, our neighbors and friends went on a fishing trip to Alaska and gave us some delicious salmon. So I googled salmon recipes and came up with one called Pepper-Honey Cedar Plank Salmon. I saw the word honey and decided to try it. It has just about every ingredient plus the kitchen sink, but it was DELICIOUS! I even did the grilling. I just about blew my head off starting the grill, but I'm still living to tell you the story. I also made my favorite side, asparagus. It looks weird, but it's delicious as well. It's just asparagus with balsamic vinegar and Parmesan cheese broiled. Jared said the meal was fantastic which made my day! Below is a poor quality photo taken with my phone.
Yum! I'll put the recipe below. I recommend it! Anyway, watch out because I'm the next Julia Child....hahahaha.

Pepper-Honey Cedar Plank Salmon

ingredients:
-2 (12 inch) untreated cedar planks (I used cedar paper wraps because I couldn't find planks and worked great with less prep time)
-1/4 cup pineapple juice
-1/3 cup soy sauce
-2 tablespoons white vinegar
-2 tablespoons lemon juice
-1 tablespoon olive oil
-3/4 cup honey
-1/4 cup packed brown sugar
-1 teaspoon ground black pepper
-1/2 teaspoon cayenne pepper
-1/2 teaspoon paprika
-1/4 teaspoon garlic powder
-6 (6 ounce) skinless, boneless salmon fillets
-1 pinch salt and pepper to taste

directions:
1. soak the cedar planks in warm water for 1 to 2 hours. (I only had to soak the papers for 10 minutes)
2. bring the pineapple juice, soy sauce, vinegar, lemon juice, olive oil, and honey to a simmer in a saucepan over medium high heat. reduce the heat to med-low, and stir in the sugar, 1 teaspoon black pepper, cayenne pepper, paprika, and garlic powder. simmer, stirring occasionally, until the sauce has reduced to a syrupy consistency, about 15 minutes. set the sauce aside.
3. preheat and outdoor grill for medium heat. place the planks on the grill, they are ready to cook on when they start to smoke and crackle just a little. (I just wrapped mine in the soaked cedar paper and put them on the grill.)
4. season the salmon with a light sprinkle of salt and pepper. place the fillets onto the smoking cedar plank, close the lid of the grill, and cook for 10 minutes. spoon a small amount of the sauce over the salmon fillets, and continue cooking until the fish turns opaque in the center, about 5 minutes more. serve with the remaining sauce.
